Origin and coffee beans
Our Colombian filter coffee comes from the San Sebastián region in Cauca, where volcanic soil, constant rainfall, and moderate temperatures provide a stable environment for high-quality coffee production. The area is home to several small farms that grow Castillo at altitudes of up to 2,000 meters and carefully hand-pick ripe cherries.
Washed with precision
San Sebastian is processed using the washed method. The coffee cherries are pressed to extract the beans, and the beans are fermented to break down the sticky pulp. After that, the beans are washed, and the coffee is dried slowly and carefully. This method gives the coffee a higher level of acidity, increased complexity, and a cleaner cup.

Castillo – a robust Arabica variety that thrives particularly well in Colombia's highland climate.
Sweet and full-bodied with notes of orange, cocoa, and plum, and a mild, pleasant acidity.
Washed process – the beans are fermented, washed and slowly and gently dried. This method gives the coffee increased complexity, a fine acidity and a clean taste profile.
This coffee is particularly well suited as filter coffee and is best enjoyed using a V60, Chemex or pour-over method.

In the cup, you'll encounter notes of orange and plum, which give the coffee a fresh and fruity character, while cocoa adds depth and a soft, sweet finish. The mild acidity lifts the flavour without dominating, resulting in a full-bodied, well-balanced cup with the cleanliness and clarity that the washed method is known for.
