Our new Colombian filter coffee comes from the San Sebastián region of Cauca, where volcanic soil, constant rainfall and moderate temperatures provide a stable environment for the production of high-quality coffee.
San Sebastian is processed using the washed method. The coffee berries are pressed to force the beans out, and the beans are fermented to break down the sticky pulp. The beans are then washed and the coffee is dried slowly and carefully.
This method gives the coffee a higher level of acidity, increased complexity and a cleaner cup of coffee.
