Our new seasonal coffee, Confite, comes from the Marcala area in Honduras.
Confite is grown on the Caballero family farm in the Marcala area of Honduras. Marysabel Caballero and her husband, Moises Herrera, have been awarded for their commitment to developing quality coffee in Honduras several times.
Confite has notes of prune, cranberry and cocoa. The nuances of flavour in the coffee are due to the processing process used, which with this bean is Extended Fermentation Natural.
The entire fruit, including the skin, pulp and inner layers, is dried together. It is not until after drying that the skin, pulp and inner layers are removed from the raw coffee beans. This method allows the pulp to contribute a lot of sweetness and character to the coffee. With Extended Fermentation, the natural fermentation process is extended. This produces deeper and more complex flavors in the coffee.
