MORE ABOUT OUR SEASONAL COFFEE, LALESA
The first seasonal coffee of the year, Lalesa, comes from the region of the same name in the Gedeo area of Ethiopia. Lalesa is one of the best growing areas in Gedeo and is known for its dense, layered semi-forest vegetation and high-quality coffee grown in the shade.
The coffee is made from coffee berries from local coffee farms, which supply the coffee to the Alemayehu Tilahun Washing Station in Lalesa. Alemayehu has been working with coffee for 20 years, and built the washing station in 2018 with the goal of only purchasing coffee berries from local coffee farms in Lalesa.He attributes his success to the relationships he has cultivated in the community and farmers around his washing station.
The berries are hand-picked and hand-sorted. The berries are then processed using the washed method. This means that the coffee berries are pressed to force the beans out, which are fermented to break down the sticky pulp.The beans are then washed and the coffee is dried slowly and gently. This method gives the coffee a higher level of acidity, increased complexity and what is described as a cleaner cup.
