Coffee bean processing

Gitwe is processed using the honey method, where the beans are dried with some of the sweet fruit pulp intact. This gives the coffee a natural, floral sweetness and a soft, light body that neither the washed nor natural methods can precisely replicate.

The coffee cherries are de-pulped and then slowly dried on raised drying beds for 10–15 days – a process the station manager has perfected over several seasons.

A wash station in the middle of the hills

The Gitwe washing station is located in the Nyamasheke district in Rwanda's Western Province, surrounded by hillsides covered in green coffee trees. The station was built in 2018 and taken over by the Rwanda Trading Company in 2019 with a clear goal: to produce coffee of the highest quality and explore new processing methods.

The quality in the area is due to a combination of high altitude, abundant rainfall from its proximity to the Nyungwe Forest, and the volcanic soil along the shores of Lake Kivu – together, some of Africa's best conditions for specialty coffee.
